Jinan bazirou rapidly expands
"In the past two years, the number of bazirou (a kind of fatty pork fillet) shops in Jinan has grown rapidly, and the number is now estimated to exceed 1,000," said Han Zhen, chairman of the Jinan Catering Association of the Jinan Federation of Industry and Commerce.
The expansion of brands such as Chao Yi Xing and Wuyue Temple Bazirou has been particularly rapid.
There are more than 100 bazirou brands in Jinan. Chao Yi Xing alone has over 200 stores, all of them selling bazirou, while Wuyue Temple Bazirou has over 50 stores in Jinan, Han said.
As the number of stores increases, the taste and shape of Jinan's bazirou continues to evolve. "In recent years, the taste of Jinan's bazirou has changed to appeal to young generation, with flavors such as spicy, peppercorn, lemon, and sweeter flavors," Han said. He also noted that the shape of bazirou has been evolving, from the traditional long strip to pagoda-shaped and jar-shaped versions.
Bazirou used to be served only with fried eggs. "In recent years, there have been egg yolks, meat-stuffed peppers, and other combinations that cater to the preferences of young people," Han added.
More bazirou establishments are beginning to venture beyond Jinan. Earlier this year, Chao YiXing opened a store in Beijing, drawing attention from the catering industry. Wuyue Temple Bazirou has opened more than 10 stores in cities such as Linyi and Jining.
