Yardlong beans capture taste of summer in Jinan

One of the simplest ways to enjoy yardlong beans is in the form of a cold salad. After being briefly blanched, the beans are mixed with garlic, sesame paste, vinegar, and soy sauce, creating a refreshing dish that balances richer flavors on the summer table.

For a richer flavor, many locals turn to dry-fried yardlong beans. Slowly cooked until slightly wrinkled and fragrant, the beans are seasoned with Sichuan peppercorns and dried chilies, giving them a savory taste with a hint of smokiness.
